Hot take (updated): You can make this drink with scotch (The Original), bourbon (The Commoner), or cognac (The Après). It’s good all three ways. The cognac version may just be my new fav – perfect for Christmas and after Thanksgiving dinner.

This is Fall epitomized in cocktail form. From scotch whiskey to allspice dram, you could not possibly get cozier. All the other flavors cut the scotch quite nicely so this isn’t a punch-in-the-stomach cocktail. And it was the Allstar at our Inaugural Saturday Supper last weekend. Many thanks to a good friend who rocked the cocktail bar, as always. This gives #fallvibes and really brings the season. Happy Spooky Month!

what you need

1 1/2 oz Scotch of choice

1 1/2 oz Apple Cider

1/2 oz Averna Amaro

1/4 oz Lemon Juice

1 teaspoon Simple Syrup (or a demerara sugar cube)

1 healthy teaspoon Allspice Dram

2 dashes Angostura Bitters

how to make it

Place all ingredients in a cocktail shaker and shake vigorously with ice. 

(if using a sugar cube, you will need to muddle this so it mixes with the other ingredients)

Strain over a large ice cube and garnish with an orange peel. #fallvibes

Burnt Peach Old Fashioned

Burnt Peach Old Fashioned

Tired of the simple Old Fashioned, don’t have the blow torch to make a Smoked Old Fashioned, but not quite yet ready for a Bourbon and Blood? Let’s add some summer peaches… The burnt peach Old Fashioned is the perfect Summer/Fall segue. You can use your grill… or not. And it pairs perfectly with summer Mains like Summer Sausage Orzo. This is by far my favorite Old Fashioned.

what you need

1/2 oz peach simple syrup

2 oz bourbon of choice

1 orange slice

2 small chunks of cooked peach (or really ripe fresh peach)

2 dashes cardamom bitters 

2 dashes Angostura bitters

1 large ice cube

For the peach simple syrup:

1 whole peach, cut into 1″ chunks

1 cup sugar

1 cup water

how to make it

First make the peach simple syrup. Combine the water, sugar, and chunked peach in a pot with a dash of cinnamon and bring to a boil over medium heat. Reduce heat and simmer for 20-30 minutes, until the liquid reduces a bit, turns darker brown, and viscosity increases slightly. Using a slotted spoon, remove the peach chunks and set aside for use in your cocktail. Remove the syrup from heat, allow to cool, place in glass jar, and store in the fridge for up to several weeks. 

Now, make your cocktail. Combine the bitters, orange slice, peach chunks, and peach simple syrup in a cocktail mix. Muddle. Add the bourbon and crushed ice. Stir until chilled. Strain into a glass over a large ice cube. Garnish with fresh peach slices and a cocktail cherry. 

If you really want to get fancy, you have two options: 1) Smoke this thing, or 2) garnish it with grilled peaches (whoa. flavor).

what you need

2 oz honey syrup (2 oz water + 4 tablespoons honey + 2 dashes cardamom bitters + microwave)

2 oz bourbon of choice

1 oz freshly squeezed lemon juice

Strongwater Golden Bitters

1 egg white

how to make it

Make the honey syrup by combining the water, honey, and cardamom bitters (just a dash or two… cardamom is strong!) and microwaving for 20 seconds. Stir, let cool, and ensure it tastes sweet ✨

In a cocktail shaker, combine honey syrup, bourbon, lemon juice,  golden bitters, and egg white. NO ICE!  Yes, I realize Strongwater’s golden bitters may be a bit of a special ingredient, but they are worth it – bitters with turmeric, cardamom, and allspice. Give the mixture a good, solid dry shake. ~90 seconds.

Open the cocktail shaker, add a few ice cubes, and shake delicately a second time just to cool the mixture. Serve in a coupe glass and top with something interesting – a twist, a dehydrated hibiscus flower, an ultra thin strawberry slice 🍓

Consider this your early Holiday present. It’s a good one. If Aperol Spritz set the tone for the summer and Paper Plane became the vibe of the fall, this drink says Holiday in my house. It is quite a bit smoother and more balanced than a Paper Plane. If you’re not a cranberry fan, not to worry – it is not over-cranberry-y. It is tart and smooth and very festive. Truth in advertising, I stole this one from a new food blog friend, The Yankee Cowboy.

what you need

**1 batch of cranberry simple syrup, ~2 hrs prep time

For syrup:

1 cup honey

1 cup filtered water

1 1/2 cups fresh cranberries

 

For cocktail:

2 oz bourbon of choice

1 oz lemon juice

1 oz cranberry simple syrup

how to make it

To make the cranberry simple: combine 1 cup of water and 1 cup of honey in a saucepan over high heat. Heat until it comes to a rolling boil. Add the cranberries then remove from heat, cover, and let stand for two hours. After two hours, strain the liquid into a jar for storage and keep the cranberries for later. Note that the consistency will not be syrup-y but it will be thicker than water. 

To make the cocktail: Combine 1 oz lemon juice, 1 oz cranberry syrup, and 2 oz bourbon of choice in a cocktail shaker with ice. Shake vigorously and strain over a large ice cube. 

To garnish: Roll the cranberries in cane sugar so they become little sweet gems. Stick them on a toothpick and use them as garnish!

Blood and Sand

Whether it is the last of the fall leaves or the #wintervibes, for whatever reason what I woke up craving today was a scotch-based beverage. Not bourbon. Scotch. And yes, when I say I woke up craving it, I mean to say I wanted scotch before coffee. Blood and Sand is a cocktail that’s been around since about 1930. I adjust it slightly to make it more to my liking – less sweet – and I also use a fairly smooth scotch (Scapa). Naturally, I garnished it with a caramelized blood orange slice. For studies in the blowtorch, see the Smoked Old Fashioned post.

what you need

1 3/4 oz scotch (I used Scapa)

1 3/4 oz fresh blood orange juice

3/4 oz sweet vermouth

1 tablespoon juice from your cocktail cherries of choice (I used Luxardo)

how to make it

Add all ingredients to a cocktail shaker and shake vigorously with ice. Serve in your glass of choice and garnish with an orange twist or, if you prefer, a caramelized blood orange sliver.

Bourbon and Blood

Bourbon and Blood Cocktail

In the spirit of getting more cocktail recipes on the blog, Halloween, and using up the Solerno Blood Orange Liquor that I have moved exactly six times without touching a drop, I decided to experiment with a trendy, spooky cocktail. Naturally, I added my own twist by pulling out the blow torch and smoking the crap out of half my kitchen. I also dimmed the original recipe slightly so it was less sweet because Solerno can be a syrup-y addition to any cocktail. What remains is a still-sweet, slightly smoky, herbaceous, auntumn cocktail.

what you need

1.5 oz bourbon or rye of choice (need some whisky recommendations? Check out my Whiskey post.)

1/2 oz Solerno Blood Orange Liquor

1/2 oz sweet vermouth

3 dashes bitters of choice (I used 1 dash Fee Brothers Black Walnut bitters and 2 dashes Reagan Orange Bitters)

Optional garnish: rosemary, thyme, tarragon, or a candied orange peel

how to make it

Start by smoking your glass. Don’t know how to smoke a cocktail? Check out the videos in the Smoked Old Fashioned post. I singed (not burned) a few rosemary sprigs several times under my cup and let it stand while I made the cocktail in a separate mason jar. My friend pointed out that the singed rosemary looks like a smoked a cockroach. I did not, in fact, smoke a cockroach…

In a separate vessel, mix all the ingredients together with large ice cubes and stir to combine. Upturn your smoky glass and immediately insert a large ice cube, spinning the ice cube a couple of times so the ice absorbs the smoke. Pour the cocktail over the top, garnish, and enjoy!

You’ve all had my Classic Manhattan and are, by this point, hopefully well-versed in decent bourbon or rye selection. So now we put a small twist on my all-time favorite cocktail (a more subtle twist than straight up ordering a Sazerac). So what, you might ask, makes a Manhattan “French?” A traditional 1860s-style Manhattan is typically made with rye whiskey though more modern tastes frequently prefer bourbon. A French Manhattan uses a cognac base and emphasizes citrus with the gentle addition of Grand Marnier or Cointreau. It is a smoother cocktail – substantially smoother than a Rye Manhattan – and might be more agreeable who those whose tastes do not naturally gravitate towards the darker spirits.

The paper plane would be all too sweet if it weren’t for the bitterness added by, well, the bitters. This is a unique, festive twist on a class Sidecar cocktail, which makes it great for the holidays. We incorporate the lavish blood orange to elevate the flavors. A classic Sidecar contains cognac, orange liquor, and lemon juice. Here, we substitute blood orange juice for lemon juice and use Solerno blood orange liquor instead of Cointreau.

Paper Plane Cocktail

This weekend I finally got my hands on a bottle of Amaro Nonino. My good friend and connoisseur of both Spanish wine and cocktails has been sending over cocktail recipes for upwards of a year all of which feature this magical ingredient which had not yet made its way to the mixer shelf. Amaro is an Italian bitter not unlike Campari, Aperol, or Fernet Branca. This cocktail has quickly become a favorite this summer after we ODed on Aperol Spritz’s early on thanks to my beautiful nephew and niece-in-law. The paper plane would be all too sweet if it weren’t for the bitterness added by, well, the bitters. As it stands, it’s a fresh, zesty, lemony, foamy, beautiful cocktail that will rival your summertime cosmo or G&T any day of the week. It is definitely here to stay.

what you need

1 oz bourbon of choice

1 oz Amaro Nonino

1 oz Aperol

3/4-1 oz fresh lemon juice

how to make it

Shake all ingredients vigorously in a cocktail shaker with ice. Serve immediately in a chilled glass and garnish with a lemon twist.

Old Fashioned

The Old Fashioned

For those of you who have tried my Smoked Old Fashioned or my Burnt Peach Old Fashioned, it occurred to me the other day that I hadn’t made it simple for everyone by just including a base Old Fashioned recipe. The Old Fashioned is one of the most quintessential cocktails, like the Manhattan or the Sazerac (my other two favorites). The Old Fashioned is the sweetest of the three and the most fruit-forward. 

what you need

2 oz bourbon of choice

1 sugar cube

5 dashes bitters of choice (mix it up from Aromatic or Citrus with walnut, golden spice, or oak)

1 orange slice (plus more for garnish)

1 cocktail cherry

how to make it

In a mixing glass, sprinkle the bitters over the sugar cube, then add the orange slice. Muddle.

Add the bourbon and some crushed ice. Stir. 

Strain into cocktail glass over large ice cube. 

Garnish with a cocktail cherry and a small orange slice.

French Manhattan

A French Manhattan uses a cognac base and emphasizes citrus with the gentle addition of Grand Marnier or Cointreau. It is a smoother cocktail – substantially smoother than a Rye Manhattan – and might be more agreeable who those whose tastes do not naturally gravitate towards the darker spirits. As one additional note, a friend recently introduced me to Armagnac, a species of brandy distilled in the Gascony region of France. It would likely make an excellent addendum to a French Manhattan evening.

what you need

1 1/2 oz Cognac of choice (for entry level, I recommend Courvoisier, though my Christmas present this year was a bottle of D’USSÉ Essential and it is out of this world!) 

1/2 oz Grand Marnier

1/2 oz Sweet Vermouth (I recommend Dolin)

3 dashes Black Walnut bitters or bitters or choice

Garnish: orange peel, quarter orange slide, and/or cocktail cherry.

how to make it

Place a few ice cubes in a cocktail shaker and add all ingredients minus the garnish.

Let sit for 60 second and then stir well. Do not shake. 

Strain cocktail into cocktail glass and add garnish, assembled on a toothpick.

Serve chilled. You may want to chill your glasses ahead of time.

Cucumber Mint Gimlet

With this cocktail, I officially declare it summer. This beautifully crisp invention came from a friend of mine after two bottles of Prosecco’s worth of Aperol Spritz’s and my vehement proclamation: “will you please do something with this cucumber?!” Little did I know the ‘something’ would become one of the highlights of the evening. The cucumber mint gimlet is crisp, vibrant, cool, and everything a summer cocktail should be. It also paired perfectly with our Mediterranean-themed meal which included homemade tzatziki sauce.

Spicy Brussels

Spicy Brussels Sprout

This is the appetizer for the Whiskey Pairing Dinner. Brussels Sprouts are one of our favorite falltime veggies, especially when they’re made crispy. There are so many unique toppings for sprouts (sprouts!) that they’ll never get boring. Pairing. I hinted to @whiskey_CA_mmelier that the sprouts I wanted to make were spicy sprouts and he was not pleased. Alcohol and pepper hit the same flavor receptors on the palette and it is therefore very difficult to make a pairing. We settled on an only slightly spicy, mildly sweet sprout and decided to go rogue and open our pairing with a scotch! A mild one. The initial idea was Bruichladdich, a young but incredibly refined Islay  scotch – that’s why the signature blue bottle is visible in some of the photos. After much discussion, however, we turned to the sweeter, fuller Scapa Skiren from Orkney Island. It brought out the sweetness of the sprouts really well with banana/melon on the nose and walnut on the backside (as @whiskey_CA_mmelier’s wife pointed out, who was better than all three of us at tasting).  

what you need

1 batch of fresh Brussels sprouts

3 tablespoons olive oil

Salt and Pepper to taste

1/2 teaspoon Cayenne pepper or red pepper flakes

Toppings: toasted pine nuts and pomegranate seeds (my favorite!), toasted pecans (pictured here), hydrated golden raisins (soaked in water for an hour), parmesan cheese, feta cheese crumble with bacon. 

Whiskey Pairing: Scapa Skiren Scotch Whiskey – The Orcadian

how to make it

Heat oven to 400. Cut the ends off the sprouts, then cut in half or quarters depending on their size. Toss them in olive oil and desired spices, and spread out onto lined baking sheet (for a crispier sprout) or cast iron pan. 

Bake for 10 minutes, remove from oven, and stir generously, adding a bit more spice at this point if you desire (I may have drizzled some honey). Return and bake another 10 minutes. 

If using toppings that are not pre-toasted like pecans, sprinkle the pecans and cook for another 3-5 minutes. You definitely want some crisp, burnt sprouts but obviously not to char the whole lot, so just keep an eye on them. Serve warm!

This is the dessert for the Whiskey Pairing Dinner generously provided by The Piemaker. I’ve never been a huge pecan pie fan (nor was I a big Key Lime Pie fan) until The Piemaker came into my life. This pecan pie is as ‘from scratch’ as it comes, with hints of bourbon and maple folded into the filling, served with a luxurious maple cinnamon cream. This is a decadent dessert – decadent is an understatement. But if you’re looking to level up your Holiday meal game, this is the place to start. We definitely felt the need to eat one and a half slices… 😃

Pot Roast

This is the main course for the Whiskey Pairing Dinner and, my, what a deep, flavorful pot roast this is! Let me start by saying that I sourced a 4.6 pound chuck roast from the Spring House Farm Store to feed the four of us and had no regrets. A simple pot roast is easy enough to pull off especially if you have a slow cooker, but this really takes the flavor profile up a notch to make this velvety, sinful, fall-off-your-fork roast with plenty of fall veggies.
