Summer in Madrid

Loosely based somewhere afloat in the Atlantic between a French 75 and an Aperol Spritz, I bring you Deep Summer. (And yes, our Ginger really did spend a summer in Madrid…)

what you need

1oz strawberry simple syrup

1/2oz fresh lime juice

(optional) 1oz floral gin (I like The Botanist)

3-4oz prosecco

For strawberry simple syrup: 1 pint of strawberries and equal parts sugar to your water (so, 2 cups of water and 2 cups of sugar). 

how to make it

Combine strawberry simple, lime juice, and gin (if using) in a cocktail shaker with ample ice. SHAKE SHAKE SHAKE. Pour into a tall-stemmed champagne glass (the only kind) and top with prosecco. 

To make strawberry simple syrup: combine 1 pint of fresh strawberries (halved with tops removed) with equal parts water and sugar. Boil on medium heat for 15-20 minutes, remove from heat, allow to cool, and strain into a mason jar. Will keep in the fridge for several weeks.

Disclaimer: this is not my recipe. (but those are my pictures … I made the cake). This recipe is from the forthcoming Stardew Valley Cookbook (May 2024).

What is Stardew Valley? Stardew Valley is a farming simulator videogame made by Eric Barone (solo dev) in the spirit of the Harvest Moon series and released in 2016. Since, Barone has released numerous content updates to the community completely free of charge, the latest being the 1.6 update which launched last month. (that’s a big deal in the videogame industry where every substantive addition to a game comes with a $5-$35 price tag).  

Why does a videogame have a cookbook? Because Stardew Valley is about community and it is, first and foremost, a simulation (which I have written about before). That means it is a game that includes aspects of real life, like Roblox or The Sims franchise. One of those aspects is cooking. Now you know how we got here. 

What is the significance of the Pink Cake? Nothing in particular except that it is Haley’s favorite in-game and it is the authoritative birthday cake for the storyline. Also, the game is all about farming and animals so, naturally, the recipe calls for duck eggs 🦆

What about the other recipes? Well, obviously, the cookbook isn’t released yet, but I am interested in what other recipes will be included. This is mostly because the recipes in-game are distinctly Japanese and rather odd… Spicy Eel (which increases your luck at fishing), Lucky Lunch (which increases your luck at everything), Strange Bun, Parsnip Soup, Seafoam Pudding…. you get the picture. Man, I cannot wait to see these recipes. 

The cookbook is a product of collaboration between Eric Barone himself and Ryan Novak, Barone’s friend who authored the first Stardew Valley online guide. Will I post all the recipes? No. Was I dying to post this one because they gave it to me as a thank you for my pre-order? Absolutely. And I totally used the Easter holiday as an excuse to make it. 

Cooking notes: It came out well. Moist, a little heavy, and I definitely should have used all the jam (I only used half thinking it might spill out of the sides. It didn’t.). Highly recommend if you need a quintessential, do-not-argue-with-me birthday cake… especially for a festive holiday, a young girl child, or a fellow gamer like myself. Happy baking!

Almond Muesli with Strawberries and Cacao

Porridge, oatmeal, overnight oats, granola – there are many oat-based breakfast options but this one is really special. It can be made at the beginning of a week or weekend to have for several days and is my favorite thing to munch in the morning before a heavy lift (just enough energy and no weirdness in the stomach). The flavors are so fresh and delicate, though, I definitely would not couch it as exclusively a pre-workout food. This is perfect for a weekend morning, quiet with lots of stretching and dance, or videogaming and photography. It is simple and quick. To make it really, really shine, you should make your own Almond Milk for it (and before you object like crazy, it’s not as difficult as it sounds). But you can just as easily use any store-bought milk you prefer like oat, cashew, or macadamia. 

What makes this muesli so special?

The freshness, the richness, the simplicity.

The delicacy of the flavors.

The lightness of the dish itself while still making you feel satisfied.

what you need

1 1/4 cups nut milk of choice (I vote that you try making your own Almond Milk if you never have)

1/2 cup rolled oats

2 tablespoons flax or golden flax seeds

1/4 cup strawberries, diced (or berry of choice)

4 tablespoons fresh honey or maple syrup

2 tablespoons cacao nibs (that’s “cacao” not “cocoa”)

1 tablespoon lemon zest

Cinnamon

how to make it

Prepare your Almond Milk as indicated in this post. Or get your store-bought nut milk ready. 

Place rolled oats, flax seeds, and lemon zest in a small container and top with Almond Milk. Drizzle on some honey and place in the fridge overnight. 

In the morning, give it a stir. Top with additional flax, berries of choice, cinnamon, cacao nibs, and more honey. Enjoy hearty, cool, and satisfying.

what you need

4″ chunk of fresh, juicy watermelon

1-2 strawberries

1 oz lemon juice

2 tablespoons sugar

2 oz vodka

2 oz water

(optional) sprinkles

**but, really, when are sprinkles ever optional?

how to make it

Muddle the watermelon, strawberries, lemon juice, and sugar together in a cocktail shaker. 

Add the vodka and water. Shake vigorously with ice until frothy. 

Rim a coup or cocktail glass with lemon juice and dip into sprinkles of choice. Strain the cocktail into the glass and top with a paper thin strawberry slice. 

Tips! Use other fruit (like raspberries). Let the melon, berries, vodka, lemon juice, and sugar soak for 20 minutes before making the cocktail for stronger flavors. Make it frozen by blending frozen watermelon chunks with all ingredients and adding water and/or plant-based milk as desired.

Mini Pavlovas

Mini Pavlovas with Cardamom Cream

Alright, you’ve all probably tried my Pavlova cake by now which quickly became the favorite dessert of last summer. Light, airy meringue with freshly whipped cream, and plenty of berries, what’s not to love? If you want to give them a try this summer, here is the recipe for individual serving cookie-style pavlovas. For more topping suggestions, check out the Pavlova Cake post. Enjoy!

what you need

1 cup white sugar + 2-3 tablespoons extra

4 large egg whites

1 teaspoon vanilla extract

1/2 teaspoon cream or tartar (sub arrowroot, rice wine vinegar, or lemon juice)

1 teaspoon corn starch

2-3 teaspoons cardamom

1 pint heavy whipping cream

1/2 pack of strawberries, sliced (for serving)

1/2 cup finely chopped and roasted pistachios (for serving)

how to make it

Preheat the oven to 350 and prepare a baking sheet with parchment paper.

Base. Beat the egg whites until peaks are stiff and stand upright when the beaters are inverted. Add in the sugar and continue beating until the peaks are stiff and glossy. This should take just under 10 minutes. Stir in the cream of tartar and cornstarch.

Spoon meringue into 6-8 small dollops and lightly press down into a 2-3 inch circle with small dips in the middle.

Bake. Place in oven and immediately reduce oven temperature to 200. Bake the mini Pavlovas for 30-40 minutes total, until turning slightly golden and beginning to crack on top. Remove from oven and cool.

Top. Beat the heavy whipping cream (I use just under a pint) until soft peaks form. Add desired amount of sugar for sweetness (2-3 tablespoons for me) and beat until medium peaks form. Add the cardamom for cardamom cream. Pro-tip: try adding cinnamon and/or maple syrup to the whipped cream to sweeten and flavor. Spoon whipped cream onto meringue base and use a spatula to spread it and smooth it to desired aesthetic. 

Decorate. Top with sliced strawberries and pistachios. Serve immediately.

You can easily make the meringue base and whipped cream in advanced, and assemble the Pavlova at the last minute for serving.

When the Winter begins to give way, I am overcome with gratitude for warm sun rays, vibrant cherry blossoms, and that lime-y green that we only see once a year for a few weeks when the natural world begins to emerge from its hibernation. That crisp, warming air calls for something fresh, something bright, something cleansing. That thing is Sunshine Water. During the pandemic, I got in the habit of making a pitcher of this stuff when I woke up in the mornings I worked from home, and sipping on it all day long. It is a great way to wake up the digestive system before coffee. I’ve always found that citrus has an energizing effect. So mix up a pitcher and enjoy on your next sunny day with the windows open! what you need

1 knob fresh ginger root

1 knob fresh turmeric root 

1 teaspoon cayenne pepper

1 lemon

1 orange of choice 

(optional) fresh strawberries or raspberries

(optional) 1-2 tablespoons fresh honey

Approximately 1 liter of water

how to make it

Using a juicer, juice the lemon and the orange, and pour the juice into the pitcher. 

Drizzle the inside of the pitcher with honey (if using).

Using a fine grater, grate the peeled ginger and turmeric root into the pitcher. Add the cayenne. 

Fill pitcher with water! Drop in a few sliced berries on top. Give it a good stir and enjoy!
